Raisin Pudding Ingredients

  • 1 1/8 cups butter
  • 1/3 cups white sugar 4 eggs
  • 1/2 teaspoons grated lemon zest
  • 1/2 cups all-purpose flour 4 teaspoons baking powder 1 1/2 cups raisins
  • 1/2 cup brandy

Directions

Soak raisins in brandy for 1/2 hour.

Preheat oven to 350 degrees F (175 degrees C). Grease a 10 inch, round pan.

Cream butter with sugar. Add 4 eggs, lemon zest, flour, and baking powder. Mix well . Add brandy and raisins.

Bake for about 50 minutes. Cut into wedges to  serve.

You’ll have your delicious tipsy raisin pudding ready in under an hour! Additionally, serve with whipped cream or ice cream for extra sweetness!
